If you think this is your Grandmas Fettuccini Alfredo.. think again. This gooey pile of decadence is completely free of dairy and carb heavy pasta. Though just as filling as the fat-overloaded original, this modern take on the traditional Italian classic will leave you feeling energized and to be honest, a bit like you could take on the world.
If you’ve ever even considered trying a RAW food dish, this is where you start my carb-loving, dairy addicted compadre! And if you’re already aboard the raw food, vegan, I feel fantastic train.. this recipe is a must have for your weekly rotation.
Killer Fettuccine Alfredo Knockoff Recipe
- 1c Raw Cashew Pieces
- 1c Raw Macadamia Nuts
- 1c Raw Pine Nuts
- 3 tbsp Fresh Lemon Juice
- 2 Cloves Garlic
- 2 tsp Tamari Soy Sauce
- Spiral Slice your zucchini into a bowl and set aside. If you want your noodles to look more like real pasta then use a vegetable peeler to remove the dark green skin off the zucchini. I also find that it is WAY easier to toss this dish if you break off your veggie noodles into smaller lengths as you are spiralizing them.
- Throw all of the rest if the ingredients into a blender or food processor and puree till smooth, if it’s too thick, you can add some water to thin it out.
- Toss the sauce with the zoodles and serve. (hint: use your hands to toss, it’s much easier that way!)
